Roasted Beets + Sweet Potatoes

A delicious and easy vegetable recipe to compliment any dish during the fall.   Consider eating with baked free range, organic chicken breast or halibut.

 

Ingredients:

- 1 large sweet potato (cubed with peel on)

- 3 large beets (cubed with peel on)

- 2 Tbsps fresh rosemary (chopped)

- 1 tbsp of olive oil (extra virgin, cold pressed)

- Sea salt to taste

 

Cooking Instructions:

Cube sweet potato and beets and put in a baking tray

Mix with olive oil, rosemary and sea salt

Place in oven on 350 degree F for ~ 1 hour or until veggies are tender
